Our Expertise


Sottille is a boutique chocolate house driven by a passion for excellence. Our chocolates are crafted by a team of four professional chefs, each holding a bachelor’s degree in culinary arts with a specialization in sweets and chocolates. With deep expertise in fine patisserie and confectionery, our chefs apply meticulous techniques and refined artistry to every creation. Every step of our process is designed to honor the ingredients, ensuring a luxurious and sophisticated chocolate experience that balances flavor, texture, and craftsmanship.


Our Ingredients


Organic Lebanese Pistachios

Our pistachios come from small, family-owned farms in Lebanon where they’re grown organically—free from chemicals or pesticides. We half-blend these pistachios into a crunchy butter, preserving their natural texture and nutty intensity.


Desert-Grown Cacao

Our cacao is cultivated right here in Egypt, thriving in the arid desert conditions. The intense sunlight and water scarcity stimulate the cacao plants to produce higher levels of essential oils and polyphenols—compounds that intensify flavor and aroma while offering health benefits. Research shows that environmental stress can boost the synthesis of secondary metabolites in plants, resulting in a more robust and complex flavor profile.


Our Process


We craft our signature Pistachio Fried Konafe Stuffed Chocolate Bars through a multi-step, time-honored method:


Low-Temperature Olive Oil Frying:

We fry our delicate konafe in extra virgin olive oil at very low temperatures to preserve its healthy polyphenols and monounsaturated fats. This gentle heating method prevents degradation of beneficial compounds—ensuring that the olive oil retains its anti-inflammatory and antioxidant properties.


Homemade Cacao Butter Blend:

Our homemade cacao butter is blended slowly with concentrated milk, cream, and milk. This careful layering allows the ingredients to meld gradually, creating a luxurious texture and balanced flavor in every bar.


Artful Assembly:

The crunchy pistachio butter and the refined konafe are combined and encased in our chocolate, available in both white milky and milk chocolate versions. Every step is executed with care, ensuring that each ingredient’s natural character is honored.
